Dr. Charles McWilliams emphasized the prevalence of vitamins A, B, C, D, and E deficiencies in populations and their connection to common health complaints.
According to Dr. McWilliams, modern diets, rich in processed, pale-colored foods like white rice and bread, are major contributors to vitamin A deficiency. He also stated that some forms of vitamins B, C, and E are heat liable meaning many of them are destroyed by the heat in cooking.
